Ok, SO. If you have been searching high and low for a fantastic *chocolate buttercream* recipe, here is your answer. Finally, finally, finally I’ve found the perfect frosting when you really want something rich, dark and decadent. And did I mention super easy?! Yes. This recipe is super easy.
The BEST Chocolate Buttercream EVER.
Ingredients:
4 sticks salted* butter (sacrilegious, I know) at room temperature
2 tsp. vanilla extract
1 tsp. salt
3/4 cup unsweetened cocoa powder
1 Tbsp. instant espresso powder (I get mine from William Sanoma)
5 cups of powdered sugar
Directions:
Using electric beaters (or in a stand mixer) cream the butter at high speed until it is light and fluffy.
Add vanilla and salt, beating another minute or so until salt is completely dissolved into the butter.
Add the cocoa powder and espresso powder and cream again until fully incorporated.
Finally, add the powdered sugar. I add mine in two batches (POOF cloud of sweet dust) but if you want to keep it cleaner, add the sugar a cup at a time. Beat until fully mixed and, voila!
Use to frost cupcakes, decorate a cake, or even spread between some crispy sugar cookies- YUM!
