5 Minutes to mix up, 10 minutes to bake. That’s my kind of cookie. I think my girls can spare me for 15 minutes, sometimes… occasionally…when we’re having a good day (wink, wink).
But anyway, these really are great cookies with or without my added modifications. You would think chocolate and peanut butter would be hard to mess up, but I’ve tried one too many a recipe where the ratio was off, the cookie was too hard or too soft, or the flavors didn’t come through well enough.
Well here is a recipe to save in your box. It’s perfect. My husband actually said these are one of the best cookies I’ve ever made. Huh? Wait what? Better than pinch nut cookies? Better than my Mom’s chocolate chip? Better than all the Christmas cookies I’ve made and he’s tried over the years? I don’t know about that… but I’ll take it!
Drum roll please… 15 Minute Chocolate Peanut Butter Cookies
I may or may not have eaten cookie dough for lunch.
With a side of Shingles medication. Yum! (…)
Not to fear, fresh cookies make everyone and everything feel better.
Here’s the recipe so you can spend 15 minutes making them for yourself.
Peanut Butter Chocolate Cookies (giant glass of milk required, even though I really don’t like milk, but it seemed sacrilegious to have such nice cookies sitting out without any milk? You know I have issues):
Preheat oven to 350F
Ingredients:
- 1 cup peanut butter
- 1 egg (*or 1 egg white AND 1/4 cup applesauce)
- 1 tsp baking soda
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1/2 tsp vanilla
- 1 1/2 cups chocolate chips
- *1/4 cup flax seed meal
Mix together all ingredients thoroughly. Scoop into rounded tablespoons onto air bake cookie sheets. This is CRUCIAL. If you don’t know what these are, go buy them. They will completely change your life. Flatten each cookie gently with a fork. Bake for 10 minutes and consume.
