Something that’s become a summer staple in our house is the creamy avocado. We’ve been having it sliced up in salads, blended with sour cream and garlic as a tangy sauce for salmon, and of course added as a burger or sandwich topping. If you missed it the first time around, the avocado recipe mentioned in this post is one of my all time favorites. But nothing else beats fresh guacamole in the summertime. It’s fresh and creamy with a great bite of flavor and is something I’m craving almost 24/7.
Here’s the only guacamole recipe you’ll ever need:
The Best Guacamole Ever
Juice from half a lime
1/2 tsp. salt
1/2 tsp. black pepper
1/3 cup onion, minced
1/8 cup minced hot pepper (we used hot banana peppers straight from the garden for this one but also like jalapeno mixed in as well)
1/4 cup chopped fresh cilantro
4 large cloves of garlic, minced
4 rip avocados *try and buy avocados ahead of time. Get them slightly under ripe so they ripen perfectly on the counter top. If you go last minute shopping (like me) and your avocados aren’t quite where you’d like them to be, pop them into a brown paper bag overnight. That should do the trick.
Add everything except avocado to a medium size bowl and mix well. Add avocado and mash gently with prongs of a fork until guacamole is the consistency you like. We always lean more toward chunky that totally creamy but either is fine with me! This recipe has plenty of acid so go ahead and make this ahead of time. The lime juice will keep your guac nice and green.
Serve with blue tortilla chips and you are good to go.
