This post almost feels like an April fools joke but I promise you it’s not…Two ingredient easy chocolate muffins. My family begs for these every single DAY and when I make them I can barely get them to last for two days before there is no trace. We have to ration them for Grace because she’d all 24 muffins by herself!
Even though these are easy, they’re definitely worth their weight in gold- perfect for weekday mornings when you’re trying to get kids off to school and general life in order. I know the chaos so well people!

Easy chochocolate muffins with only two ingredients!
Combine 1 can of Libby’s pumpkin (puree, not pie filling) and one box of devils food cake mix (you could go the brownie mix route here too – equally delicious). The mixture will seem very thick but keep mixing, this is just how you want it. Plop 1/4 cup mounds into greased muffin tin cups and bake at 350 for 25-40 minutes (keep an eye on them after the 25 minute mark- finished muffins should be soft but not feel wet if you tap the top of one. You could use paper baking cups too. The baking time varies greatly depending on the mix you use) but I promise these are basically fail proof. My easy chocolate muffins are dense and fudgey and best eaten while still warm.

Plus, regardless of the junk my family ingests throughout the day I feel good about the fact that they inhaled pumpkin which is an amazing source of fiber and nutrients. So… winning.
