Lilly and I made a pretty fun treat yesterday that I have to share.
“Ice cream” sandwiches! Except, there really isn’t any ice cream involved. These little treats are made out of Fig Newton crisps- those flat cookies that are a relatively new addition to the Fig Newton Brand, and pure banana. Yup- the “ice cream” is just frozen blended banana. Did you know that banana’s turn into ice cream when frozen and blended? If you haven’t tried this little treat, do yourself a favor and give it a go. You won’t believe how much the texture is just like ice cream.
To make the “ice cream”:
Slice a few ripe bananas into 1 inch pieces. Freeze them in a little ziplock bag until frozen but not rock solid. Put the bananas into a blender (or use an emulsion blender if you have one) and blend until the bananas turn into a thick, ice cream like mixture. Use this plain as I have here, or add cocoa, peanut butter, or really anything else that sounds good to you.
Scoop a little dollop of the banana mixture onto the cookies and press together to seal. Roll the edges in sprinkles and voila! A healthy frozen treat for your kiddos to cool off in this heat.
