Two ingredient Chocolate Muffins. My family begs for these every single DAY and when I make them I can barely get them to last for two days before there is no trace. We have to ration them for Grace because she’d all 24 muffins by herself!
Combine 1 can of Libby’s pumpkin (puree, not pie filling) and one box of devils food cake mix (you could go the brownie mix route here too – equally delicious). Plop 1/4 cup mounds into greased muffin tin cups and bake at 350 for 25-40 minutes (keep an eye on them after the 25 minute mark- finished muffins should be soft but not feel wet if you tap the top of one. the baking time varies greatly depending on the mix you use) but I promise these are basically fail proof. They are dense and fudgey and best eaten while still warm.

Plus, regardless of the junk my family ingests throughout the day I feel good about the fact that they inhaled pumpkin which is an amazing source of fiber and nutrients. So… winning.
